When you're leaving long enough that you might be attacked, and don't want to lose your army, particularly for the young players who can't successfully defend yet, do this... Find someone lower than level 9, who has been lower than level 9 for a long time and is thus, obviously idle. Click the Send Reinforcement icon on their castle. Send all your troops to reinforce.
Nobody can spy on the target because he's too young. Nobody can attack the target because he's too young. So nobody can ever attack your troops which are reinforcing that target, because the target is too young.
Once this lesson is learned, the rest is pretty easy.
